Peanut butter Chocolate Chip PROTEIN Cookies

Who doesn’t crave a delicious chocolate chip cookie? But have you found yourself at the bottom of the cookie jar before?

I sure have. That’s why I created this macro friendly version!

Now we can eat a whole batch and not consume a lot of calories, SUGAR, and all the other junk that’s in cookies.

These cookies use minimum ingredients, all organic and natural. These cookies even have a good fiber content and VERY little sugar! And they actually taste amazing!

I test all my healthy treats with my boyfriend (he doesn’t like anything green or good for you lol) and they passed the test! He didn’t even realize ;)

So-  Here are the ingredients you’ll need for these amazing protein packed cookies!

  • 2 scoops protein powder (I used 1up Nutrition’s Vegan Peanut butter!) Using my code: Caseyfitcakes saves you 20%!
  • 1/2 cup of ORGANIC peanut butter
  • 1/4 cup of Coconut Sugar
  • 2 tbsps of Coconut Flour
  • 1/4 tsp of Baking Soda
  • 1/4 tsp of Salt
  • 1/2 tsp Pure Vanilla Extract
  • 1 Whole Egg
  • 1 Egg White
  • Chocolate Chips :)

  1. Preheat oven to 350 degrees F. Line a cookie sheet with parchment paper
  2. Combine the peanut butter, coconut sugar, salt, egg, egg white, vanilla, and baking soda and mix all together
  3. Add in protein powder and coconut flour- should turn into dough now. I used my hands to kneed it more and pour in desired amount of chocolate chips (I suggest a good amount, with the peanut butter they can taste a little dense/almost dry)
  4. Portion out size of cookie onto sheet. My batch made 7!
  5. These will only need to cook for about 5-8 mins. After 5 mins I took a fork and pressed them down as they just puff up. You want them golden on the edges but still look doughy in the middle.

I think these would also be great with a mashed up banana or walnuts!

The macro break down:

The whole entire batch is:

49g of Carbs, 93g of Protein, 73g of Fat

(Fiber 21g, 19g of sugar)

So depending on how many cookies you get out of the batch divide those numbers and that’s what each cookie count will be. For me since I made 7 cookies each cookie was:

7g of Carbs, 13g of Protein, 10g of Fat   (3g fiber, Less than 2g sugar)

A typical peanut butter chocolate chip cookie would be:

47g Carbs, 6g Protein, 20g Fat….
